Seven of our own, changed four times a year

The Still list

Seven drinks Nia and the team have worked out themselves, built on Welsh spirits where there is a good one, changed with the seasons and retired when they stop being interesting. The current seven are on the menu page.

A house drink has to earn its place: it has to be something you cannot get elsewhere, it has to be repeatable on a Saturday night at eleven, and it has to be better than the classic it is standing next to. Most ideas do not make it.

Nia runs the development on Monday afternoons when the bar is shut. A new drink starts as a spirit and an idea, goes through twenty or thirty versions, gets drunk by the whole team and by the regulars at the bar on a Tuesday, and goes on the list if it survives. We lean on Welsh distilleries (gin from Dyfi and the Gower, rum from Barti, whisky from Penderyn) because the spirits are good and because it is where we are, and on a cellar of house-made cordials, shrubs and infusions that change with what is in season.

The list changes in March, June, September and December. Drinks that regulars will not let go of come back the following year. Every drink is listed with its full ingredients, its strength and whether it is sweet, dry, bitter or long, so you can choose without a lecture; and we will tell you honestly which one to have if you ask.

Questions about our drinks

What is the most popular drink?

For eight years it has been the Arcade Sour, a Penderyn whisky sour with a bara brith syrup and a blackberry shrub, which we have tried to retire twice and been shouted at both times. It is on every list.

Book a table, or take the back room.

Forty seats, so Thursdays to Saturdays need a booking. The back room seats sixteen with no hire fee against a minimum spend; the whole bar is yours on a Monday. Eighteen and over after 5pm.
