Three hours on a Sunday morning: make the dough, stretch it, fire it, eat it

Sunday dough school

Three hours on a Sunday morning in the shop, eight people at most: how the forty-eight-hour dough is made, how to stretch a base by hand, how to get a pizza on and off a peel, and two pizzas each from the oven. £45 a person with a dough kit to take home.

People kept asking how we make the dough, so on Sunday mornings, before the evening fire, we show them. It is the most useful three hours of cooking you will spend this year, and you get lunch.

You arrive at ten to a coffee and a dough ball that was mixed on Friday. Carys shows you how the dough was made, what the forty-eight hours do, and how to make a version at home that works in a domestic oven or a garden pizza oven. Then you mix your own batch to take home in a tub, stretch two bases by hand, top them from the counter, and slide them onto the oven floor yourself.

You eat what you make, with a glass of something, at the big table by the window at about half twelve. You leave with your own dough, a sheet with the recipe and the timings, a dough scraper, and a voucher for a pizza on a Wednesday. It runs most Sundays from February to November, eight people at most, from fourteen years old with an adult. Gift vouchers are the same price and last a year.

Questions about sunday dough school

Do I need to know how to cook?

No. Most people who come have never made bread. If you can wash your hands and follow Carys, you will leave with a dough that works.

Can we book the whole class for a group?

Yes, for eight, as a birthday or a team morning, at the same price. Ring Carys on the mobile and she will find a Sunday.

Pick a slot. It comes out as you walk in.

Choose a collection time from the slots still open, every ten minutes while the oven is lit, say what you would like, and it goes into the oven three minutes before your time.
