Wood-fired on Taff Street, ninety seconds a pizza.

A forty-eight-hour dough, an oven fired with oak from up the valley, and a collection slot every ten minutes, so your pizza comes out of the fire as you walk in.

Oven litThe oven is lit until 2:30pm.
The arched mouth of a brick wood-fired pizza oven, oak logs burning at the back, a pizza with a blistered crust on the oven floor and a wooden peel reaching in
A forty-eight-hour doughItalian 00 flour, Welsh spring water, sea salt and a pinch of yeast, mixed on Monday and Tuesday and proved cold for two days, so the crust is light, blistered and easy on the stomach.
Welsh oak, not gasThe oven burns seasoned oak from a managed woodland at Llanwonno, six miles up the valley. No gas burner hidden at the back; when the fire is low we say so.
A slot every ten minutesThe oven takes six pizzas at a time, so we take six orders every ten minutes. Pick a slot on the order page and walk in to a box with your name on it.
Vegan and gluten-free, properlyA cashew mozzarella we make ourselves, and a gluten-free base on its own peel, its own tray and its own patch of the oven floor, with the honesty to say the oven is shared.

What we do

Six things from one oven, each with its own page.

All six

01

The menu

Ten pizzas on a forty-eight-hour dough, from a nine-pound margherita to the Taff Street with nduja, hot honey and Caerphilly cheese; garlic bread and wings from the oven; four dips made here; a Nutella calzone for afters. Every price and every allergen on the menu page.

Margherita £9.

02

Build your own

Pick a base, classic, white, vegan or gluten-free, then up to six toppings from eighteen, and the page adds it up as you choose: a classic with nduja and roast mushrooms comes to £11.90. Order it at the slot you want with one click.

A classic base with tomato and fior di latte £8.50.

03

Vegan and gluten-free

Every pizza on the board can be made vegan with a cashew mozzarella we culture ourselves for a pound more, or on a ten-inch gluten-free base for two pounds more, with its own peel, tray and cutter. The oven floor is shared, and we say so.

Any pizza made vegan for £1 more.

04

The pizza van

A 1972 Citroën H van with a wood-fired oven in the back, for weddings, birthdays, works dos and village fêtes: from £14 a head for forty or more, unlimited pizza for two hours, fifteen miles from Pontypridd included, two of us to cook.

From £14 a head for forty guests or more.

05

Sunday dough school

Three hours on a Sunday morning in the shop, eight people at most: how the forty-eight-hour dough is made, how to stretch a base by hand, how to get a pizza on and off a peel, and two pizzas each from the oven. £45 a person with a dough kit to take home.

£45 a person.

06

The dough

Mixed on Monday, in the oven on Wednesday.

Flour, water, salt and a pinch of yeast, and then time. The dough is mixed on Monday and Tuesday, balled by hand and proved cold for forty-eight hours, which is why the crust is light and blistered and why nobody leaves feeling as if they ate a brick. It is stretched by hand to order, never rolled.

  • Italian 00 flour and Welsh spring water
  • Vegan as it comes; cheese is the only dairy

How we work

Four things that are true of the oven.

Out of the oven, into the box

A pizza is at its best in the first ten minutes. That is why we cook to the slot rather than to the queue, and why we would rather you waited for a slot than took a pizza that sat in a box under a lamp.

The price as you build it

The build-your-own page adds the base and every topping as you choose them and shows the total before you order. The price on the page is the price at the counter, VAT included.

Allergens on every line

Gluten, milk, fish, nuts and the rest are marked on every menu line, kept to the recipe, and the gluten-free base has its own peel. Ask at the counter for the full ingredient sheet.

From up the valley

Caerphilly cheese from a dairy in Llanfyrnach, ham from Carmarthen, leeks and herbs from a grower in Llantrisant, oak from Llanwonno. The tomatoes and the flour are Italian, because some things are.

The pizza van

A 1972 Citroën H van we fitted with a wood-fired oven over a winter. It goes to weddings, birthdays, works dos and village fêtes within reach of Pontypridd, needs no power for the oven, and cooks the whole board for two hours from £14 a head for forty or more.

The menu

Best pizza between Cardiff and Merthyr, and I have tried them all. The Taff Street with the hot honey is ridiculous. Booked the 7:20 slot, walked in at 7:20 and it was coming out of the oven.

My daughter is coeliac and Carys rang me back to talk through exactly what they do and what they cannot promise. We tried it; she was fine and it was the first pizza she has enjoyed in years. Honest people.

The pizza van

Had the van at our wedding at a farm near Llantrisant. It rained sideways and they cooked a hundred and twenty people through it without a word of complaint. Still the thing guests mention first.

Questions people ask at the counter

Do you deliver?

No. A wood-fired pizza is at its best in the first ten minutes and loses it in a delivery bag. We cook to your collection slot so that it is coming out of the oven when you walk in. If you are in a car, ring from the loading bay and we will bring it out.

How do the collection slots work?

Every ten minutes while the oven is lit we can cook six pizzas, so each ten-minute slot takes six. The order page shows the slots still open, from at least twenty minutes from now; pick one, tell us what you want, and it goes into the oven three minutes before your time.

Why do Friday pre-orders close at four?

Friday night fills up. Pre-orders for Friday evening close online at 4pm so that we can plan the dough and the fire; after that, ring from five or come in and we will fit you in between the slots, which on a Friday may mean a wait.

Can I build my own pizza?

Yes: four bases and eighteen toppings, up to six on one pizza, and the build-your-own page adds the price up as you choose. It then takes the pizza, with the price, straight into the order form.

Is there somewhere to eat?

A bench for eight inside by the oven, and Ynysangharad Park over the bridge, which is where most people go in summer. We are a takeaway first; there is no table service.

Do you do parties?

Yes, with the pizza van, a converted Citroën H van with an oven in the back, from £14 a head for forty guests or more. The van page has the packages and the dates already taken.

Pick a slot. It comes out as you walk in.

Choose a collection time from the slots still open, every ten minutes while the oven is lit, say what you would like, and it goes into the oven three minutes before your time.
