The cakes

Six things we make, each priced.

A cake shop is six things under one roof: the wedding cakes, the birthdays, the cupcakes, the Welsh baking in the window, the cakes for people who cannot have butter or wheat, and the hour at the table before a wedding. Each has a page with what it costs and how long it takes.

Cupcakes and towers

Cupcakes in the twelve flavours with a swirl of Swiss meringue buttercream: from £3.20 each in the shop, a boxed dozen for £34, and towers for weddings and parties from forty to a hundred and twenty with a cutting cake on top. Two days' notice for a dozen, two weeks for a tower; vegan and gluten-free the same price.

04

The Welsh range

The shop is named after it: Nain Morgan's bara brith, fruit soaked overnight in strong tea, at £9.50 a two-pound loaf; Welsh cakes made on the bakestone every morning at £8.40 a dozen; a Welsh tea box of a loaf, a dozen Welsh cakes and a jar of Rudry honey for £24; and a bara brith wedding tier with whisky buttercream. Posted anywhere in Britain on Tuesdays.

A two-pound bara brith £9.

05

Vegan and gluten-free

Vegan cakes in all twelve flavours (Swiss meringue made with aquafaba, butter replaced with a plant block, the same sponges) and gluten-free cakes in nine, baked on Mondays when the kitchen has been cleaned down and before any wheat flour is opened, in their own tins, and boxed before the week starts. The same price as every other cake, and they appear on the estimate page the same way.

The same price as every other cake: an eight-inch vegan or gluten-free celebration cake £55, a vegan wedding tier at the buttercream rate of £3.

06

Tastings and consultations

Before a wedding cake, an hour: a free consultation with Seren at the shop on Cardiff Road or on a video call, with the estimate page open, the sketches on the table and the flavours in front of you. The tasting box is six flavours of your choice for £18, collected or posted, and the £18 comes off the cake if you order. Tuesday to Friday by appointment and Saturday afternoons.

The consultation is free.

How the cakes are made

Four things about the baking.

Welsh butter and eggs

Butter from a creamery in Carmarthenshire, eggs from a farm at Rudry four miles up the hill, flour milled in Pembrokeshire, honey from Rudry. It is in the price and you can taste it.

Baked for the day

Wedding sponges are baked on the Wednesday for a Saturday, filled and crumb-coated on Thursday, finished on Friday and driven on Saturday morning. Nothing is frozen.

Monday is for vegan and gluten-free

The shop is closed, the kitchen is cleaned down from the week, and the vegan and gluten-free sponges are baked before any wheat flour is opened, in their own tins, then boxed and labelled.

Sugar flowers by hand

Seren makes every sugar flower: a rose takes about forty minutes, a peony an hour and a half. They dry for a week before they go on a cake, and they keep for years after.

The price before the consultation, and the Saturday before you ring.

The estimate page works out a wedding cake from the tiers, the finish and the servings, with the lead time and the next free Saturday. Then one form orders it, a celebration cake, cupcakes or the tasting box; Seren replies within the working day.
