Thirty-two made in the back room, sixteen in the window by a daily rotation, eight vegan, twenty-six gluten-free in a cup

The flavours

Thirty-two flavours made from Gower milk and cream, sorbets and oat-milk ices: the classics (vanilla with real pods, dark chocolate, strawberry), the Welsh ones (bara brith, Welsh cake, honey from Bishopston, Penderyn and raisin), the fruit sorbets, and the ones Ffion is trying this month. Sixteen are in the window each day by a rotation; the flavours page shows today's and filters by vegan, gluten-free or nut-free.

Sixteen open steel tubs of homemade ice cream in a display freezer seen from above, raspberry ripple, pistachio, salted caramel, chocolate, lemon sorbet, mango and others, swirled tops

Ffion keeps thirty-two flavours on the books and makes sixteen every morning in ten-litre batches, which is why the window changes daily. Some are classics because people would riot without them, some are Welsh because we are, some are sorbets because a hot day wants one, and four or five are whatever she is trying that month.

The rotation is simple and on this website: the thirty-two are in a fixed order, and each day the window shows sixteen of them in a run starting from a different place, so every flavour is in the window on about half the days of the year and never away for more than four days. The flavours page shows today's sixteen first and the other sixteen below with the date each is next in, so if you are coming for the bara brith you can see whether to come on Thursday or wait until Saturday.

The flags are on every flavour: vegan (made on oat milk or a sorbet, with its own scoop and its own tub well), gluten-free (no biscuit, cake or malt in it; served in a cup, because the cones are wheat) and nut-free (no nuts and scooped from the nut-free end with a dedicated scoop; the kitchen handles nuts, so we say "no nuts in it" rather than promise a nut-free kitchen). Filter the flavours page by any of the three. Twenty-six are gluten-free, eight are vegan, twenty-seven are nut-free.

Questions about the flavours

Can you make a flavour that is not on today?

For a tub ordered a day ahead, yes, any of the thirty-two in a litre or a five-litre. Single scoops are what is in the window.

Are the cones gluten-free?

No; the cones and waffle cones are wheat. A gluten-free flavour is served in a cup, and we have gluten-free cones in a sealed packet behind the counter for 50p.

Sixteen in the window today, and a tub ready in two hours.

The flavours page shows today's sixteen from the thirty-two with the vegan, gluten-free and nut-free ones marked. Order a tub to collect without queuing, book the striped cart for a wedding, or a place at the Saturday school, on one form.
