The kitchen

Six things we fry and do.

One farm, one brine, three spice levels, and a kitchen that makes its own slaw and gravy. Each of the six has a page with the prices and how it is done.

A day

From the farm van to the fryer.

Eight in the morning

The birds arrive from the farm near Llandeilo. Rhian and Darren joint them: breast, thigh, drumstick, wing; the carcasses go in the stockpot for the gravy.

Two in the afternoon

Tomorrow's chicken goes into the buttermilk brine for twenty-four hours. Today's comes out of yesterday's.

Every order

Two dredges by hand, twelve minutes in rapeseed oil, the spice dusted on at the pass, into the box, out of the door.

Close

The oil is filtered every night and changed twice a week, more often than the rules ask; nothing fried is kept for tomorrow.

Pick the pieces, pick the heat, see the price.

Two pieces to ten, mild, hot or xtra, up to three sides: the box builder works it out before you ring. Fried when you order, about twelve minutes; delivery around Llanelli, free over £25.
