Welsh beef, lamb, pork and free-range poultry with the price per kilo on every ticket and the farm named beside it
The counter
Twenty-five cuts on the counter on a normal day, all priced per kilo on the ticket and on this website: beef from three farms in the Vale and Monmouthshire, lamb from above Cowbridge, pork from Carmarthenshire, free-range chicken and duck from near Usk. Cut to order, weighed in front of you, wrapped in paper.

A butcher's counter is a list of decisions, and ours are these: Welsh beef and lamb from farms we have stood in, pork from one herd, chickens that have been outside, and a price per kilo on every ticket so that you can work out the joint before you ask. What is on the counter changes with the week; the list on this website is the list on the glass.
Beef is the heart of it: sirloin, ribeye, rump and fillet from the dry-ageing cabinet; rib of beef on the bone for a Sunday; topside and silverside; brisket, which we sell more of every year; braising and stewing steak diced while you wait; and mince, ground twice from chuck and nothing else. Lamb from the two farms above Cowbridge: legs, shoulders, racks French-trimmed, loin and chump chops, neck fillet for the slow cooker, and mince. Pork from a herd in Carmarthenshire: belly scored for crackling, loin joints with the skin on, shoulder for pulling, chops, and the dry-cured bacon we cure ourselves. Free-range chickens and ducks from near Usk, whole or in pieces.
Everything is cut to order. Say how thick you want the steak, whether the leg should be boned and rolled, whether the chops should be chined, how many pieces the chicken should be in; it takes a minute and we do not charge for it. The ticket on every tray carries the price per kilo and the farm; the same list is on the counter page here, and the order page will price a joint by weight before you ring. Saturday orders are best in by Friday noon, when we go to the cold store for the week.

Questions about the counter
Can I order ahead for Saturday?
Yes, and it is the best way: ring, email or use the order page by Friday noon and the joint is cut, wrapped and waiting under your name. Saturday mornings are busy and an order skips the queue.
Do you deliver?
Within about four miles of the shop, on Tuesday, Thursday and Friday afternoons, for £4 or free over £60. Pontcanna, Canton, Llandaff, Riverside, Grangetown and the city centre are all in. Further out, ask.
Order ahead and skip the Saturday queue.
Pick the cut, say the weight, and the order page tells you the price before you ring. In by Friday noon and the joint is cut, wrapped and under your name on Saturday morning. Delivery within four miles on Tuesday, Thursday and Friday.
