The counter

I describe what I am cooking and Beca tells me the cut, the weight and how long. The rib of beef at Easter was the best thing I have ever put on a table and it cost less than the supermarket's because they weighed exactly what I asked for.

Dry-aged beef

Thirty-five-day sirloin cut three centimetres thick while I watched. You can see the beef hanging in the window on the way past, which is either reassuring or alarming depending on your view. For me it is reassuring.

Christmas

Eleven Christmases. Ordered in October on the website, chose the slot, picked up on the twenty-fourth with a mince pie in hand. The bronze turkey is a different animal from the supermarket one and the pigs in blankets are not negotiable in our house.

Barbecue boxes

The Eight box every other Saturday from June. The card with the cooking order sorted the chicken problem for good. Swapped the pork for extra lamb with a day's notice, no fuss, no extra charge.

Sausages

The Glamorgan sausages are the best in Cardiff and the gluten-free pork means my daughter can have the same as everyone. Four stars only because Saturday after eleven is a queue to the door and the pavement is narrow; order ahead and it is five.

Wholesale

Van at the back door by half seven, same beef as the counter, same farms, and Huw answers his mobile. Three years, one wrong delivery, fixed within the hour. That is a supplier.

About the four stars

Saturday after eleven is a queue to the door, and Sioned is right.

One room, one counter, three of us cutting, and a pavement that is narrower than we would like. What we have changed since: orders placed by Friday noon are wrapped and bagged under your name and handed over at the end of the counter without queuing; the sausages and burgers are on a separate till by the door from nine to one; and the order page prices the joint so the conversation at the counter is shorter. It is still a queue after eleven. Come at eight, or order ahead.
