Shish and mixed grill

The grill is a metre and a half of lumpwood charcoal under a steel hood at the back of the shop, lit at half past three. Everything on this page is cooked on it on a skewer: it takes eight minutes rather than three, and that is the difference you can taste from the door.

Lamb shish is leg, cubed and marinated overnight with onion juice, olive oil and pul biber. Chicken shish is thigh, which stays wet over coals in a way breast does not. Adana kofte is lamb minced with red pepper, chilli and tail fat, pressed onto flat skewers by hand. Wings are marinated in yoghurt and paprika. Peppers and tomatoes go on the end skewers and come with every plate.

Have any of them in a wrap with salad and sauce, as a plate with bulgur or rice, salad and bread, or as the mixed grill: lamb shish, chicken shish, a kofte, four wings, rice, salad, bread and two sauces for £15.50, which feeds one very hungry person or two reasonable ones.
