Lamb doner built on the spit in the shop every morning, carved to order
Doner kebab
The doner is built by hand every morning: minced and sliced lamb layered on the spit with onion, our spice mix and a little yoghurt, cooked slowly in front of the burners and carved thin to order. In a pitta, a wrap, a box or on chips.

Most kebab shops buy the doner as a frozen cone from a factory. Ours is built on the spit by Mehmet every morning from leg and shoulder of lamb, some minced and some sliced, layered with grated onion, his spice mix from Adana and a little yoghurt, pressed and chilled, then cooked from four o'clock in front of the burners and carved thin to order.
On a Saturday the spit is eighteen kilos and it is gone by two in the morning; on a quiet Tuesday it is ten. Because it is built here it has more texture than a factory doner and less salt. Have it in a pitta with salad and two sauces, in a wrap, in a lahmacun, in a box with rice and salad, or on a tray of chips with garlic sauce, which is what Aberdare has at one in the morning.
There is also a chicken doner, built the same way from thigh meat marinated in yoghurt and paprika. Both carry their allergen codes on the menu; the bread contains gluten and the yoghurt sauce milk.

Questions about doner
Is the doner halal?
Yes: the lamb and chicken come from a halal butcher in Cardiff, and the certificates are on the wall by the counter.
Why does it run out?
Because we build one spit a day. On a Saturday, if it is gone at two, we say so on the phone and offer the shish.
Build it, see the price, then ring.
Pitta, wrap, lahmacun or a box; doner, shish, kofte or falafel; two sauces and chips. The builder gives the price before you pick up the phone, and it is the same at 2am as at 4pm.
