The cheese counter

I ask for something strong and goat and Ffion hands me four slivers until I find it. The label says the strength out of five and the price per hundred grams, so I know what I am buying before she cuts it. The best counter in South Wales.

Hampers

Built a hamper on the website for my parents' anniversary, watched the total go up, added the Welsh sparkling to get over the free delivery line. It arrived the next day with a handwritten card and the cheese wrapped in waxed paper. My mother rang in tears.

Tasting evenings

Six cheeses and three wines on a Thursday with twenty strangers who were friends by the Époisses. The maker from the Gower came and told us about her goats. I have been to five and I now know I like sheep's cheese, which I did not.

Lunch

The lunch board on a Friday is the reason I have not left this job. Three cheeses, two meats, proper bread, a glass of white. Fourteen pounds and worth more.

The cheese counter

Wonderful cheese and the most knowledgeable people I have met in a shop. Four stars because it is not cheap, and they do not pretend it is; Comté at nearly seven pounds a hundred grams is a treat, not a habit. They will always point you at something cheaper if you ask.

The wine shelf

Rhys sold me a fino to go with the Manchego and I have not looked back. The shelf is arranged by what it goes with, which is how wine should be sold, and the dozen under twelve pounds are better than most of what I paid twenty for elsewhere.

About the four stars

It is not cheap, and Margaret is right.

Cheese from a farm that milks its own herd and makes by hand costs more than cheese from a factory, and a Comté aged two years costs more than one aged six months. We pay the makers what they ask. What we do about it: the price per hundred grams is on every label and on this website so nobody is surprised; we cut a hundred grams as happily as a kilo; the young Caerphilly at £2.40 is one of the best cheeses on the counter; and if you ask for something cheaper that will do the job, we will always point you at it.
