The dough
Italian 00 flour, water, salt and a little yeast, mixed by Marco every morning and balled by size into trays that go into the cold room for 48 hours. A slow prove gives a base that is chewy at the edge and crisp underneath and tastes of bread. It is stretched by hand when your ticket prints.
How we work
Italian 00 flour, a 48-hour cold prove, a tomato sauce from Italian plum tomatoes we cook ourselves, and real mozzarella. Not a frozen base or a cheese blend.
A sixteen-inch pizza has 2.6 times the pizza of a ten, not 1.6. The size picker draws them to scale and gives the price per square inch, so you can see which is the better buy.
Codes on every line. The base contains gluten; the cheese milk. A gluten-free base is available at ten inch, but it is cooked in the same oven as everything else, so it is not safe for coeliacs. Our kitchen handles all 14 major allergens.
